2 cups spinach
2 cups arugula
1 English cucumber, chopped
1/2 cup Kalamata olives
1/2 cup Castelvetrano olives
1/4 cup fresh parsley, chopped
2 tablespoons olive brine
1 shallot, minced
1 cup feta cheese, crumbled
