Today, variations exist worldwide, with different spices and fillings, making them a beloved treat beyond just the holiday.

Weigh out 500 g of strong white flour and 75 g of caster sugar in a mixing bowl.
Add 2 teaspoons of mixed spice and 1 teaspoon of cinnamon to the bowl.
Add 10 g of yeast and 10 g of salt to opposite sides of the bowl to ensure proper rising.
Add the zest of a lemon, 40 g of melted butter, 1 beaten egg, and 300 ml of warm milk to the dry ingredients.
Mix all the ingredients together until combined.
Add a generous helping of mixed orange and lemon peel and plump sultanas to the mixture.
Knead the dough briefly before placing it back in the bowl to rise for 1 hour and 30 minutes.
After the first rise, knead the dough again briefly before returning it to the bowl for a second rise.
Shape the dough into buns, pressing down and rolling them into shape.
Cover the baking sheets with the shaped buns and let them rise for 1 hour for the final prove.
Prepare a simple flour and water paste to pipe crosses on the top of the buns.
Preheat the oven to 200°C fan.
Bake the buns in the oven for 15 to 20 minutes until golden brown.
Brush the warm buns with golden syrup for a sticky finish.
