1 large julienned potato
2 tsp of salt
2 tsp of red chili flakes
1 tsp of red chili powder
1 tbsp of crushed coriander seeds
1 tsp of cumin
water (as needed)
3/4 cup of oil
1 large grated onion
2 tsp of ginger paste
2 tsp of garlic paste
1 tbsp of green chili paste
1.5 tsp of red chili powder
1.5 tsp of salt
1/2 tsp of turmeric powder
1.5 tsp of cumin
1.5 tsp of coriander powder
1 large grated tomato
2 liters of water
1/2 tsp of all spice powder

Add 1 large sliced onion to a bowl.

Add 250 grams of spinach.

Add 2.5 cups of grams flour (besan).

Add 1 large julienned potato.

Add 2 tsp of salt.

Add 2 tsp of red chili flakes and 1 tsp of red chili powder.

Add 1 tbsp of crushed coriander seeds and 1 tsp of cumin.

Mix well without adding water initially.

Add a little bit of water and make a batter.

Heat medium hot oil in a pan for frying.

Fry the fritters (pakoras) until perfectly golden and take out from the oil.

For the gravy, add 3/4 cup of oil to a pan.

Add 1 large grated onion (or onion paste) and fry until light golden.

Add 2 tsp of ginger paste and 2 tsp of garlic paste, frying for 2 minutes.

Add 1 tbsp of green chili paste, 1.5 tsp of red chili powder, 1.5 tsp of salt, 1/2 tsp of turmeric powder, 1.5 tsp of cumin, and 1.5 tsp of coriander powder.

Add 1 large grated tomato (or tomato paste) and mix well.

Gradually add water and cook for 10 to 12 minutes.

Add 2 liters of water and cover, cooking until it starts to boil.

Add the fried fritters (pakoras) and cover.

Cook on medium flame for 5 minutes.

Add 1/2 tsp of all spice powder and cover again.

Cook on a very low flame for 2 to 3 minutes.

Dish out the fritter's curry.
