5g Chinese cinnamon
5g Sichuan peppercorns
5g star anise
5g fennel
1 tablespoon dark soy sauce
3 tablespoons light soy sauce
1 teaspoon salt
1 bunch of green onions
200g pickled cowpea
1 tablespoon sunflower oil
1 teaspoon chili powder
100g pickled sour bamboo shoot
1/2 teaspoon light soy sauce
1/2 teaspoon salt

Prepare 100g soybeans one night in advance by washing them with water.

Add 1 teaspoon salt and enough water into the bowl with soybeans, stir evenly, and immerse for at least 10 hours.

After 10 hours, drain the soybeans and put them into a pan to fry over medium heat.

Add 2 tablespoons of sunflower oil into the pan and stir fry the soybeans over low heat until they become burnt yellow, indicating they are cooked. Save for later.

Cut 1 leek into pieces and save for later.

Prepare 3 eggs by putting them into a pan and adding enough water to immerse them. Boil over medium heat.

Transfer the mixture into a saucepan, add eggs and enough water, and use a big fire to boil.

After boiling, reduce to a small fire and cook for 1 hour, skimming the bubbles while boiling.

After 1 hour, add 1 teaspoon salt and 1 bunch of green onions, then continue to cook for 30 minutes.

Drain the eggs, and once cool, cut them in half and save for later.

Prepare 200g pickled cowpea by washing them twice with water and cutting them into pieces.
