Originating from the city of Guilin in southern China, Guilin Rice Noodles are a beloved street food known for their rich flavors and unique toppings. Traditionally enjoyed as a breakfast dish, they are often served with a variety of meats and garnishes, reflecting local tastes. Today, this dish has gained popularity across China and beyond, with many regional variations emerging.
Prepare 100g soybeans one night in advance by washing them with water.
Add 1 teaspoon salt and enough water into the bowl with soybeans, stir evenly, and immerse for at least 10 hours.
After 10 hours, drain the soybeans and put them into a pan to fry over medium heat.
Add 2 tablespoons of sunflower oil into the pan and stir fry the soybeans over low heat until they become burnt yellow, indicating they are cooked. Save for later.
Cut 1 leek into pieces and save for later.
Cut 6 slices of ginger and save for later.
Cut 50g pickled red peppers into pieces and save for later.
Prepare 3 eggs by putting them into a pan and adding enough water to immerse them. Boil over medium heat.
After the water boils, reduce to a small fire and cook the eggs for 8 minutes. Drain and immerse in cold water for 3 minutes, then drain and shell them.
Prepare 500g sirloin by cutting it into pieces and saving for later.
In a pan, add 2 tablespoons sunflower oil and 1 tablespoon sugar, then stir fry over small fire until the sugar becomes dark and foamy.
Add the sirloin into the pan and stir fry evenly.
Add 5 bay leaves, 5g Chinese cinnamon, 5g Sichuan peppercorns, 5g star anise, 5g fennel, leek, and ginger into the pan and stir fry for 2 minutes.
Add 1 tablespoon dark soy sauce and 3 tablespoons light soy sauce into the pan and stir fry evenly.
Transfer the mixture into a saucepan, add eggs and enough water, and use a big fire to boil.
After boiling, reduce to a small fire and cook for 1 hour, skimming the bubbles while boiling.
After 1 hour, add 1 teaspoon salt and 1 bunch of green onions, then continue to cook for 30 minutes.
Drain the eggs, and once cool, cut them in half and save for later.
Prepare 200g pickled cowpea by washing them twice with water and cutting them into pieces.
In a pan, add 1 tablespoon sunflower oil, 1 teaspoon chili powder, and half of the pickled red peppers, stir fry until fragrant, then add pickled cowpea and stir fry for 1 minute. Save for later.
Prepare 100g pickled sour bamboo shoot by washing them twice with water.

Add 1/2 teaspoon light soy sauce and 1/2 teaspoon salt into the pan, stir fry evenly, and save for later.
Prepare 1 lettuce by washing it with water and boiling it in enough water over a big fire.
After boiling, add lettuce to blanch for 30 seconds, then drain and immerse in cold water. Save for later.
To cook Guilin rice noodles, add enough water into a pan and boil over a big fire.
After boiling, add Guilin rice noodles and stir from time to time to avoid sticking. Cook until easy to chop with chopsticks.
Drain the noodles and immerse in cold water for 3 minutes, then drain and place in a bowl.
Add some lettuce, pickled sour bamboo shoot, pickled cowpea, soybeans, half an egg, sirloin, and enough braised soup into the bowl.
