Open the canned tuna in oil and drain it.
Chop the Vidalía onions and celery.
If using, chop pickled jalapenos and banana peppers.
In a mixing bowl, combine the drained tuna, mayonnaise, chopped onions, celery, pickled jalapenos, mustard, pickles, banana peppers, salt, black pepper, and chopped hard-boiled eggs. Mix well until combined.
Choose a crusty Italian loaf for the sandwich.
Heat a Blackstone griddle on low temperature and add a little avocado oil to it.
Butter one side of each slice of the Italian loaf.
On the unbuttered side of half the slices, spread a mound of the tuna mixture.
Top the tuna with slices of smokehouse cheddar and gouda cheese, and optionally add sliced fresh garden tomatoes with a sprinkle of salt and black pepper.
Cover with the remaining slices of bread, buttered side up.
Place the sandwiches on the griddle and cook on low heat until golden brown, about 4-5 minutes per side, ensuring the cheese melts and the bread gets crispy.
Once done, remove from the griddle and let cool for a minute before slicing at an angle.
