Drain 2 cans of tuna in olive oil into a fine sieve with a bowl underneath.
Gently flake the tuna to remove excess oil and transfer it into a large bowl.
Add 1/3 cup of plain Greek yogurt over the tuna.
Add 1 tbsp of Dijon mustard, 1/3 cup of chopped red onion, and finely grate in 1 clove of garlic.
Add 1/4 cup of sliced kalamata olives, 2 tbsp of chopped parsley, and squeeze in 2 tsp of fresh lemon juice.
Add 1/4 tsp of sweet smoked Spanish paprika, sea salt, and a generous portion of freshly cracked black pepper.
Mix the tuna mixture until well combined, adding more Greek yogurt if it seems too dry.
Heat a non-stick fry pan over medium heat.
Assemble the sandwiches by adding the tuna mixture onto slices of sourdough bread.
Add a slice of provolone cheese over the tuna, then top with another slice of bread.
Drizzle the top of the sandwiches with extra virgin olive oil.
Add the sandwiches to the hot pan, oil side down, and gently press down on each one.
After 3 to 4 minutes, drizzle the sandwiches with more extra virgin olive oil and flip them gently.
Place a lid on the pan without fully covering it and cook for another 3 to 4 minutes.
After a total cooking time of 7 to 8 minutes, remove the sandwiches from the pan.
