Boil 6 cups of water with 2 and 1/2 cups of dried mushrooms for about 15 minutes.

Strain the mushrooms from the water using a strainer, keeping the mushroom water for later use.

Cover the pot and allow the water to evaporate, checking after about 10 minutes.

If needed, add a little extra water to keep the rice moist, but not too much to avoid sogginess; cover again and lower the heat.
