Diri Djon Djon is a traditional Haitian dish that showcases the unique flavor of djon djon mushrooms, which are native to Haiti. This dish is often served during special occasions and family gatherings, symbolizing hospitality and the rich culinary heritage of Haitian culture. Today, it has gained popularity beyond Haiti, with variations appearing in Caribbean cuisine.

Olive oil is a healthier fat option.
Clean the black mushrooms by removing dirt without washing them.
Boil the black mushrooms and set aside.
Use basmati rice, such as Goya brand, and sweet peas (or lima beans if preferred).
Prepare jojo water by cooking the black mushrooms in 48 ounces of water, which will be used for cooking the rice.
Chop fresh herbs: parsley and thyme, and dice the red bell pepper.
Add cloves and freshly ground black pepper to the mixture, ensuring cloves are not accidentally consumed.
Add all spice pimento and Maggie cubes or powder for seasoning.
Heat vegetable oil in a pan and add the a piece (Haitian seasoning) to fry for 3-5 minutes until it gets color.
Add sweet peas (or lima beans) and raw cashews to the pan and stir.
Add the chopped herbs and seasonings to the pan and let the mixture cook for a few minutes.
Add crabs to the mixture and cover the pan, cooking for about 10 minutes.
After 10 minutes, stir the mixture and check the consistency.
Add diced red bell pepper to the mixture, optionally avoiding cloves for taste.
Pour in the jojo water, ensuring not to add more water to keep the rice dark.
Wash the basmati rice before adding it to the pan.
Add the rice to the mixture, adjusting the amount based on desired stickiness.
Cover the pan with a plastic bag to steam the rice for 15-20 minutes.
Taste the rice and add salt as needed, considering the saltiness of the Maggie cubes and other seasonings.
Once the water has dried up, stir the rice and cover it again with a plastic bag, foil, or a lid to finish cooking.
