Heat a large skillet over high heat until hot.
Fry the coated pork chops in the hot skillet until browned, about 2-3 minutes per side, just to lock in flavor.
Prepare stuffing by adding 1.5 cups of boiling water to the chicken stuffing mix and let it sit for a few minutes.
Melt butter in a separate pan and add the prepared stuffing to it, mixing well.
Once the pork chops are browned, remove them from the skillet and set aside.
In the same skillet, prepare onion gravy using the drippings from the pork chops, adding more seasoning if necessary.
Return the pork chops to the skillet, cover with onion gravy, and let simmer for a few minutes before serving.
