Heat 2 tablespoons of extra virgin olive oil in a skillet over medium to low heat.
Press 4 cloves of garlic and sauté in the olive oil until fragrant.
Add 2 cups of baby spinach to the skillet and season with salt and pepper; cook until wilted, about 5 minutes.
Transfer the cooked spinach to a bowl and set aside to cool.
Season 2 pork chops on the bone with salt and black pepper on both sides.
Sprinkle all-purpose flour on both sides of the pork chops and pat it in, shaking off the excess flour.
Heat 1 tablespoon of olive oil in the skillet over medium to high heat.
Sear the pork chops for about 1-2 minutes on each side until golden brown.
Remove the pork chops from the skillet and place them on a cutting board.
Stuff each pork chop pocket with a piece of prosciutto, a piece of fresh mozzarella, and some spinach; repeat the process until the pockets are filled.
Place the stuffed pork chops in a baking dish and top each with a piece of fresh mozzarella and a little more spinach for color.
Return the skillet to the heat and deglaze with 1/2 cup of white wine, turning off the flame while pouring to avoid flames.
Cook the wine until it reduces to about half, scraping the bottom of the pan to release the flavors.
Add 1/4 cup of butter, a little salt and pepper, 2 tablespoons of capers, and the juice of 2 lemons to the skillet; mix well.
Pour the sauce over the stuffed pork chops in the baking dish.
Bake in a preheated oven at 400°F for about 30 minutes.
Remove from the oven and serve the pork chops with the sauce poured over them.
