Add sesame oil, soy sauce, dark soy sauce, and oyster sauce to the mixture and mix together.
Heat up the clay pot and add cooking oil.
Add the scallions and ginger to the clay pot and stir until fragrant.
Add the chicken to the clay pot.
Pour in the cooking wine and the sauce mixture.
Cover the clay pot and let it cook on medium-low heat for 15 minutes.
Remove the lid and check if the chicken is cooked through.
