Soak dried shiitake mushrooms and cloud ear fungus in warm water for 10-15 minutes.
Cut the white parts of 2 stalks of green onions into thinner batons and set aside.
Debone and cut 4 chicken drumsticks from Costco, removing skin and bones, then chop 2 remaining drumsticks with bones into 3-4 pieces each.
Marinate the chicken with 1 tbsp oyster sauce, 1 tbsp light soy sauce, 1 tbsp cooking wine, 1 tbsp cornstarch, and 1/3 tsp white pepper, mixing thoroughly by hand.
Cut ginger into triangular chunks (about 1 oz), shallots into chunks (1 oz), and garlic into small chunks (1/2 oz).
Slice Chinese sausage at an angle into thin pieces.
Drain and rinse the rehydrated shiitake mushrooms and cloud ear fungus, trimming off any hard stems and ripping the fungus into small pieces.
Create a sauce with 1 tbsp oyster sauce, 2 tsp light soy sauce, 1/2 tsp dark soy sauce, 1 tbsp cooking wine, 1 tsp salt, and 1 tsp sugar, adding water later.
Create a slurry with 1 tsp cornstarch and 3 tsp water.
Heat a wok on high heat and add 1 tbsp oil, then add ginger and fry until fragrant.
Lower the heat, add garlic, and stir-fry for 10-15 seconds, followed by shallots for another 15-20 seconds.
Add marinated chicken to the wok, spreading it out to sear without flipping for about a minute, then flip and cook for another 30-40 seconds.
Add shiitake mushrooms to the center of the wok, adding 1 tbsp oil and stir-frying for about a minute.
Stir-fry chicken and mushrooms together for 20-30 seconds, then add Chinese sausage and cloud ear fungus.
Pour in 1 tbsp cooking wine and stir-fry for 15-20 seconds before adding the sauce and mixing it in.
Add 1 cup of water, cover the wok, and let it cook.
