Layer soaked rice over the chicken mixture in the pot, spreading evenly.
Add enough water to cover the rice by 1 inch, then cover and cook on low heat for 25-30 minutes until rice is tender.
Fluff the rice with a fork, mixing in fresh herbs gently before serving.
