Tempura Shrimp

3/4 cup corn starch

1/2 teaspoon salt

shrimp (butterflied or whole)
cocktail sauce or Dashi sauce for serving

Start by preparing the batter a day in advance with 1 cup of flat beer.

In a bowl, combine 3/4 cup of all-purpose flour, 3/4 cup of corn starch, a small amount of baking powder, and 1/2 teaspoon of salt.

Add a few pinches of white pepper to the mixture and whisk until even.

Pour in 1 cup of flat beer and whisk until smooth.

Cover the batter with Saran Wrap and refrigerate for 1 hour.

Prepare the shrimp by butterflying them: cut down the middle but not all the way through, or leave them whole if preferred.

After the batter has chilled for an hour, heat oil in a pan to the appropriate frying temperature.

Take one butterflied shrimp at a time, drag it through the batter by the tail, let it drip off, and then drop it into the hot oil.

Fry the shrimp until they are nice and golden, avoiding overcrowding the pan.

Once fried, place the shrimp on a rack to drain and cool.

Serve the tempura shrimp with cocktail sauce or Dashi sauce.
