Reserve the shortcrust pastry for later.
Prepare the cheese filling by blending 250 grams of queso latino and 250 grams of queso quark with a mixer until creamy.
Add 4 tablespoons of sugar and 1 tablespoon of vanilla sugar to the cheese mixture, then mix in raisins.
Prepare the poppy seed filling by mixing 300 grams of ground poppy seeds, 3 tablespoons of sugar, and a splash of lemon essence.
Prepare the walnut filling by mixing 300 grams of ground walnuts, 3 tablespoons of sugar, 1 tablespoon of rum, and 1 teaspoon of vanilla sugar.
Prepare the apple filling by mixing 3 grated apples (squeezed of juice), 1 teaspoon of cinnamon, 1 tablespoon of lemon zest, 1 tablespoon of lemon juice, 1 packet of vanilla sugar, and 3 tablespoons of sugar.
Prepare a baking mold, preferably square, and roll out the shortcrust pastry between two sheets of plastic wrap.
Place the shortcrust pastry in the prepared mold lined with parchment paper.
Layer a sheet of phyllo dough on top and pierce it with a fork.
Melt 1/4 cup of butter and brush it on the phyllo dough.
Add half of the poppy seed filling on top, drizzle with melted butter, and add 2-3 tablespoons of the cream mixture.
Layer 2 sheets of phyllo dough, pierce them, and brush with butter.
Add half of the cheese and raisin filling, drizzle with 1 tablespoon of melted butter and 2 tablespoons of cream.
Repeat the process with 2 layers of phyllo, the walnut filling, and drizzle with butter and cream.
For the apple filling, layer 2 sheets of phyllo, pierce, and brush with butter without adding cream.
Repeat the layering process with the remaining fillings, ensuring to layer phyllo, fillings, and butter as described.
Trim excess phyllo hanging over the edges of the baking dish.
Brush the top layer of phyllo with melted butter and pour the remaining cream mixture on top.
Preheat the oven to 175°C (347°F) and bake for 1 hour.
Let cool before serving.
