Add milk, heavy cream, vanilla extract, and lemon zest, mixing until smooth.
Strain the mixture through a fine sieve to remove any lumps.
Pour the egg mixture into the prepared tart shells until three-quarters full.
Bake in the preheated oven for 20-25 minutes or until the filling is set and the tops are lightly golden.
Remove from the oven and let cool slightly before serving.
