Grate 1/2 head of fresh cabbage and chop any small pieces that couldn't be grated.

Place the grated cabbage into a large bowl.

Grate 1 carrot and add it to the bowl with the cabbage.

Grate a small onion and add it to the bowl with the cabbage and carrot.

In a separate large bowl, add mayonnaise (Dukes), fresh lemon juice, buttermilk, and white vinegar.

Add sugar to the dressing, adjusting the amount based on the sweetness of the mayonnaise used.

Stir the dressing until creamy and combined.

Pour the dressing over the cabbage mixture and toss well to combine.

Add salt and pepper to taste.

Transfer the coleslaw to a bag or container and refrigerate for a couple of hours, preferably overnight.
