Heat a large stew pot on medium low to medium high.

Add a little oil to the bottom of the pot.

Cut a 2.5 to 3 lb chuck roast into large chunks and season with flour, salt, and pepper.

Brown the beef in batches, ensuring not to overcrowd the pot to build fond on the bottom.

Remove browned beef and set aside.

Add more oil to the pot and lower the flame.

Sauté finely chopped celery and carrots, along with sliced garlic, until softened.

Add salt, pepper, and no salt seasoning to the sautéed vegetables.

Add 2 tbsp of double concentrated tomato paste and fry it down with the vegetables.

Add 1 can of diced petite tomatoes with juice to the pot.

Add 8 cups of water until the beef is covered, about 2/3 of the pot.
