Cut the chicken into small pieces.

Mix chicken with 1 tsp of cornstarch, 1 tsp of soy sauce, 1 tsp of vegetable oil, and a pinch of baking soda. Set aside for 30 minutes.

Crack and beat 2 eggs well.

Heat a wok or large saute pan and add 1 tbsp of vegetable oil until smoking.

Pour in the eggs and cook for 30-50 seconds until fluffy. Break into small pieces and set aside.

Add more vegetable oil to the wok and heat it up.

Add the marinated chicken and sauté for 1-2 minutes.

Push chicken to the side and add 1 tbsp of minced garlic, 1/4 cup of onion, 1/3 cup of green beans, and 1/2 cup of carrot. Stir-fry for 2-3 minutes until onion is transparent.

Add salt to taste and mix well.

Loosen up day-old rice by breaking apart big pieces with wet hands.

Heat the wok for 15 seconds and add 2 tbsp of vegetable oil.

Add rice and stir-fry for 3-5 minutes, breaking down big pieces.

Add 1 tbsp of light soy sauce and 2 tsp of dark soy sauce, mixing quickly.

Once rice is evenly colored, add back the chicken, vegetables, and eggs. Toss everything together for 2 minutes.

Add salt and pepper to taste, and spring onion right before serving.
