Camarones al Mojo de Ajo

Wash and salt and pepper the shrimp.

Butterfly the shrimp and leave the shell on.

Sear the shrimp in olive oil on medium to high heat for 3-4 minutes until seared, cooking in batches if necessary.

Remove the shrimp from the pan and wipe it down with a paper towel.

Add extra olive oil to the pan and add minced 1/4 yellow onion, cooking until translucent for 3-5 minutes.

Add 8 sliced garlic cloves to the pan and lower the heat to low, adding 1 stick of butter.

Cook the garlic until softened without burning it.

Add crushed red pepper flakes (1/2 teaspoon to 1 teaspoon depending on spice preference).

Increase heat to medium and add the shrimp back into the pan, mixing to coat with the garlic butter sauce.

Add salt and pepper to taste and fresh parsley, mixing well.

Finish with a squeeze of lemon and serve over white rice.
