Creamy Zucchini Soup

zucchini – 2,2 lb | 1000 g
onion – 7 oz | 200 g
garlic – 1 clove
cream cheese – 7 oz | 200 g
vegetable oil – 1,5 tbsp
dried parsley – 1 tsp
hot water – 4 cup | 1 l
dried basil – ½ tsp
pepper – to taste
salt – to taste

Chop up the onions and garlic, cut the zucchini into half-moon slices.

Heat the oil in a saucepan over medium heat, add the onions, fry for 3 to 4 minutes over medium heat until golden, add the garlic and the spices, cook for another minute.

Add the cream cheese, the zucchini, hot water, stir well. Bring to a boil, cover with a lid, lower the heat to minimal and simmer for 20 more minutes.

Salt to your taste, stir, turn off the stove.

Puree the soup in a blender.

Serve your creamy soup hot, sprinkled with chopped parsley, basil and with croutons.
