Use chicken thighs for the recipe.
Peel garlic and pearl onions, wash small potatoes thoroughly and remove any eyes.
Cut mushrooms into quarters.
Prepare chicken thighs by removing yellow fat and sinew.
Sprinkle salt on the chicken and let it sit for about 15 minutes, then pat dry with paper towels.
Season the chicken with salt and black pepper.
Cut the chicken into equal pieces and heat 1 tablespoon of olive oil in a skillet over high heat.
Sauté the chicken skin-side down in the skillet.
In the empty space of the skillet, add pearl onions, potatoes, and garlic to cook.
The key point is to sauté on high heat to lock in the flavors of the meat and vegetables.
Once the chicken is browned on both sides, add 200 cc of red wine to the skillet to cook off the alcohol.
After the alcohol has evaporated, add 200 cc of water and mushrooms, cover, and simmer on low heat for about 20 minutes.
After 20 minutes, check if a skewer goes through the potatoes easily, then add 2 ladles of tomato sauce and 1/2 teaspoon of black pepper.
Simmer on low heat for another 10 minutes.
Plate the dish and garnish with your favorite herbs.
