1

Begin by butchering the whole chicken, starting with the wings and legs, cutting around the joints with a sharp knife.

2

Cut the breast down one side of the breast bone and save the middle part for stock.

3

Cut the chicken into pieces: two breasts, wings, and legs.

4

Flour the chicken pieces and season with salt.

5

Heat a mixture of vegetable oil and a little olive oil in a large skillet until hot.

6

Add the floured chicken pieces to the skillet, placing them away from you to avoid splatter, and brown them until golden.

7

Remove the chicken and set aside, leaving the brown bits in the pan.

8

Add chopped onions to the skillet and season them lightly.

9

Reintroduce the chicken back into the skillet and deglaze the pan with good wine, allowing the alcohol to dissipate.

10

Add tomato sauce to the skillet and mix well with the chicken.

11

Add dried oregano, rolling it in your hands to release its flavor, and mix it into the chicken.

12

Lower the flame and let the chicken cook, checking it periodically.

13

In a separate pan, heat oil and sauté the vegetables, including shiitake mushrooms and bell peppers, until they start to caramelize.

14

Cover the vegetable pan to help them release their own juices and cook better.

15

Once the chicken is about 3/4 of the way done, add the sautéed vegetables to the chicken for the last 15 minutes of cooking.

16

Prepare a side of cheese crustini by brushing slices of country bread with olive oil and placing cheese on top.

17

Toast the bread in a pan, weighing it down with another pan to make it crusty.

18

Check the bread and remove it once it's crunchy and ready.
