4 bone in chicken thighs large (1 kg / 2 lb)
4 chicken drumsticks
1/2 tsp cooking salt / kosher salt
1/4 tsp black pepper
1 tbsp olive oil
1 onion, halved, finely sliced
2 rosemary sprigs (about 15 cm/6″ long)
2 bay leaves
3 garlic cloves, finely minced
3 anchovy fillets (or 1 tsp anchovy paste)
250 g mushrooms, sliced
2 red capsicum, sliced 8 mm thick
1/3 cup tomato paste
3/4 cup dry red wine
2 cups chicken stock/broth, low sodium
400g/14 oz canned crushed tomato
1 tsp dried oregano
16 whole kalamata olives, pitted, drained

Sprinkle chicken with the salt & pepper.

Heat oil in a large pan over high heat. Brown skin of thighs for about 6 minutes, then cook flesh side for 1 minute. Remove chicken and brown the drumsticks.

Discard all but 2 tbsp fat in the pan. Cook onion, rosemary, and bay leaves until the onion is soft.

Lower heat, clear space in the middle of the pan, and cook garlic and anchovies for 20 seconds, then stir into the onion.

Turn heat back up to high, add capsicum and mushrooms, and cook for 5 minutes until softened.

Add tomato paste and cook for 2 minutes, then add wine and simmer until reduced by 75%.

Add chicken stock, crushed tomato, oregano, salt, and pepper. Stir and place chicken in the sauce skin side up, bring to a simmer, and cover with a lid.

Simmer on medium for 20 minutes, then remove the lid, add olives, and simmer for another 10 minutes without the lid.
