Peel 3 potatoes and grate them using the large holes of a box grater. Add some salt and water to the grated potatoes. Squeeze out as much moisture as possible from the grated potatoes.
Form the potatoes into a patty shape. Heat oil in a large frying pan on medium-high heat. Add the patties when the oil is hot. Cook until the bottom turns brown, then flip and press down with a spatula. Cook for 3-4 minutes until crispy.
Heat oil and butter in a pan. Break the eggs into the pan and stir continuously for about 2 minutes. Add salt to taste and garnish with chopped parsley before serving.
In a mixing bowl, whisk together 1 egg and milk. In a separate large bowl, combine flour, sugar, baking powder, baking soda, and salt. Add the milk and egg mixture to the dry ingredients and whisk to form a batter.
Preheat a flat griddle over medium-high heat. Scoop 1/4 cup of pancake batter onto the griddle. Cook until bubbles form, then flip and cook until golden brown. Serve hot with syrup.
