540g Jumbo oats
160g raw cashews
160g raw almond nuts
40g pumpkin seeds
30g banana chips
65g dried mango
20g coconut flakes
30g dried goji berries
70g dried cranberries
2g sea salt
5g cinnamon
5g nutmeg
125ml raw honey
125ml virgin olive oil
10ml vanilla extract

Preheat the oven to 150℃ (327℉) fan oven.

In a large bowl, combine the jumbo oats, raw nuts, pumpkin seeds, dried fruits, sea salt, cinnamon, and nutmeg.

In a separate bowl, mix together the raw honey, virgin olive oil, and vanilla extract.

Pour the wet mixture over the dry ingredients and stir until everything is well coated.

Spread the mixture evenly on a baking sheet lined with parchment paper or a silicone baking mat.

Bake in the preheated oven for 20 to 35 minutes, stirring occasionally, until golden brown and crunchy.

Remove from the oven and allow to cool on a cooling rack before storing.
