Crispy Sesame Chicken

1/2 cup corn flour
1/2 tablespoon oil
1.5 cups chicken stock
4 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon sesame oil
3-4 tablespoons tomato ketchup
4 tablespoons brown sugar
1 tablespoon cornstarch
1-2 tablespoons oil
1/2 tablespoon garlic paste
2 tablespoons green onions
1/2 tablespoon oil
2-3 tablespoons chopped green onions

Cut 500 grams of boneless chicken into small pieces.

Add 1/2 teaspoon salt, 1/2 teaspoon white pepper powder, 1/2 tablespoon ginger-garlic paste, 1 tablespoon soy sauce, 1 egg white, and 1/2 teaspoon baking powder to the chicken.

Mix all the ingredients well and let it marinate for 15 minutes.

After marinating, add 1/2 cup all-purpose flour, 1/2 cup corn flour, and 1/2 tablespoon oil to the mixture.

Mix well, adding 1/4 cup water if needed to achieve a batter-like consistency.

Preheat oil in a pan on medium to low flame.

Fry the chicken pieces in the oil, ensuring not to overcrowd the pan.

Do not stir the chicken until it is slightly crispy, then turn to cook evenly on both sides.

Prepare the sauce by mixing 1.5 cups chicken stock, 4 tablespoons soy sauce, 1 tablespoon white vinegar, 1 tablespoon sesame oil, 3-4 tablespoons tomato ketchup, 4 tablespoons brown sugar, and 1 tablespoon cornstarch in a bowl.

In a separate pan, heat 1-2 tablespoons oil and add 1/2 tablespoon garlic paste, frying lightly.

Add 2 tablespoons chopped green onions and fry for a short while.

Pour the prepared sauce mixture into the pan and cook on medium heat, stirring continuously until it thickens.

Once thickened, add the fried chicken pieces to the sauce and mix well, cooking for an additional 2-3 minutes.

If you want to keep some sauce, do not cook the chicken too long.

Turn off the flame and add 1/2 tablespoon oil and 2-3 tablespoons chopped green onions, mixing well.

Serve hot with fried rice or white rice.
