Dry roast 2 tablespoons of coriander seeds, 1 teaspoon of cumin seeds, 8 bay leaves, and 15 dry red chilies until fragrant.

Roast the next batch of spices: 4 star anise, 1/2 nutmeg, 2 black cardamoms, 2 whole mace, 15 cloves, 1 teaspoon of black peppercorns, 15 green cardamoms, and 2 inches of cinnamon on low flame until fragrant.

Add the roasted spices to the first batch and let cool.

Grind the cooled spices into a fine powder.

In a bowl, combine the ground spices with 1/2 teaspoon of turmeric powder, 1 tablespoon of red chili powder, 7 to 8 cloves, and 10 green cardamoms.
