Traditionally, it was a regal dish, often served at celebrations and feasts. The masala is essential for infusing the biryani with its signature flavor, showcasing the rich culinary heritage of India. Today, variations of biryani and its masala can be found worldwide, reflecting local tastes and ingredients.

Dry roast 2 tablespoons of coriander seeds, 1 teaspoon of cumin seeds, 8 bay leaves, and 15 dry red chilies until fragrant.
Add 1 teaspoon of fennel seeds and roast for a few seconds more.
Remove the spices from heat and let cool for a few minutes.
Roast the next batch of spices: 4 star anise, 1/2 nutmeg, 2 black cardamoms, 2 whole mace, 15 cloves, 1 teaspoon of black peppercorns, 15 green cardamoms, and 2 inches of cinnamon on low flame until fragrant.
Add the roasted spices to the first batch and let cool.
Grind the cooled spices into a fine powder.
In a bowl, combine the ground spices with 1/2 teaspoon of turmeric powder, 1 tablespoon of red chili powder, 7 to 8 cloves, and 10 green cardamoms.
Add 10 dried plums (optional) for flavor and mix well.
Store the biryani masala in an airtight jar for future use.
