1 tbsp butter
2 cloves garlic
250g red pepper
150g spinach
1 tsp ginger paste
1 can coconut milk (400 ml)
1 cup almond milk
1/2 tsp red chilli powder
lemon zest
lemon rind
chilli oil (optional)

Lightly saute the fish in oil, salt & pepper.

Add butter & oil to the same pan.

Stir the garlic for a few seconds.

Wilt the red pepper & spinach.

Mix in the coconut milk, almond milk and red chilli powder & lemon zest.

Place the fish in the sauce. Carefully spoon the sauce over the fish.

Simmer for few mins, check for seasoning, and serve.
