Today, variations are found across the globe, often adapted to local tastes and ingredients, making it a versatile favorite.

Flaxseed meal provides binding without cholesterol.
Start by making the batter: combine 1 cup of flour, 1 cup of water, and 1 cup of milk in a bowl.
Add 1 egg and a pinch of salt to the mixture and whisk until combined.
Heat a pan (Swiss Crystal) and pour in a little more than one ladle of batter to make crepes.
Cook the crepe until the color changes slightly, then flip to cook the other side.
Repeat the process to make a total of four crepes.
While the crepes are cooking, prepare the sherbet by combining 200 g of sugar and 100 ml of water in a saucepan over medium heat.
Stir until the sugar melts, then add a knob of butter and a few drops of lemon juice.
Collect any foam that forms on top for aesthetic purposes.
Once the crepes are ready, stack two of them and fill with nuts (pistachios) and clotted cream or whipped cream.
Fold the crepes and place them on a serving plate.
Pour the hot sherbet over the crepes while they are still warm.
Garnish with more powdered pistachios on top.
