In a large mixing bowl, mix together dry ingredients: 2 tablespoons sugar, flour, baking powder, and salt. Whisk until well-combined and set aside.

Pour 1 cup of water and 2 tablespoons of coconut oil into a small saucepan. Bring to a rapid boil over high heat.

Remove from heat and pour the hot water mixture into the dry ingredients immediately. Mix with an electric hand mixer until the dough starts to form.

Add 1 whole egg to the dough and mix again until it comes together.

Scoop half of the dough into a piping bag fitted with a #2D tip, using a spatula to help fill it.

Prepare the cinnamon sugar mixture by combining 4 cups of sugar and 3 tablespoons of ground cinnamon in a 9x13 inch pan and mix evenly.

Heat oil in a pot to 375°F (190°C), adjusting the temperature as needed to maintain this heat.

Dampen fingers with water and pipe the dough directly into the hot oil, pinching off the end with damp fingers.

Fry the churros on all sides until golden brown, about 2-3 minutes total.
