1 Whole black chicken, cut into medium sizes
2 pieces Eu Yan Seng superior fish maw, presoaked for 1 hour and cut into pieces
150g Black beans, presoaked for 30 minutes
15g Cordyceps flowers (虫草花), presoaked for 30 minutes
12g Du Zhong (杜仲), scrubbed and presoaked for 30 minutes
12g Dang Shen (党参)
8 pieces Red dates (红枣)
15g Goji berries (枸杞子)
(optional) Shaoxing wine
Salt, to taste
Water, enough to submerge chicken (2 to 3 litres, depending on pot size)

Presoak fish maw for 1 hour, cut into pieces when softened, drain and set aside.

Presoak black beans for 30 minutes. Drain and set aside.

Give the Du Zhong a good scrub, pre soak them for 30mins, then break into pieces and set aside.

In a crock pot, transfer all prep ingredients except Goji berries.

Pour in enough water to cover the chicken.

Set heat to high and boil for 30 minutes.

When the soup starts to boil, lower heat and let simmer for another 1 hour & 30 minutes.

Salt to taste, transfer Goji berries into soup and a dash of Shaoxing wine (optional) to taste.

Cover and let sit for another 5 minutes before serving.
