Sift the almond flour and powdered sugar twice into a bowl.
Put the egg whites into a stand mixer and turn it on to low speed until little bubbles form and it lightens in color.
Add a pinch of cream of tartar without stopping the mixer.
Once the meringue shows lines and the bubbles are smaller, add granulated sugar and whip on high speed until very stiff peaks form.
Sift 1/3 of the almond flour mixture into the meringue and fold it in 10 times.
Add another third of the almond flour mixture and fold it in 10 more times.
Add the last third of the almond flour mixture and fold it in 20 more times.
Add food coloring (purple or blue) and fold it in until combined.
Test the batter to ensure it flattens back into itself; fold more if necessary.
Pour the batter into a piping bag and pipe small circles onto a baking sheet.
Tap the baking sheet down a couple of times to release air bubbles.
Let the piped macarons dry for 30 minutes to 2 hours depending on humidity.
Bake the macarons after they have dried.
In a mixing bowl, add butter and cream cheese and whip until fluffy.
Add powdered sugar and vanilla extract, then mix on high speed until combined.
Add crushed Oreo cookies and mix on high speed until well combined.
Transfer the filling into a piping bag (can use a gallon-size bag with the tip cut off).
Pair up the cooled macaron shells and pipe the Oreo cheesecake filling onto half of them, leaving a little space around the edge.
Gently place the other half of the macaron shells on top without pushing too hard to avoid overflow.
Melt white chocolate in the microwave or over a double boiler, being careful not to overcook it.
Mix the melted white chocolate with vegetable oil.
Drizzle the melted white chocolate over the macarons, spacing them out to avoid sticking.
Sprinkle ground-up Oreo cookies over the drizzled white chocolate before it hardens.
