1/2 tsp black salt
1/2 tsp black pepper powder
1/2 cup grated cheese (optional)

Boil 2 cups of water with 1 tsp of salt.

When the water comes to a boil, add 2 cups of rice flour and mix well.

Turn off the flame, cover, and let it rest for 5 minutes.

Prepare the Tangy Tomato Seasoning by grinding 2 tbsp of dried tomato, 1 tbsp of Kashmiri red chili powder, 1 tsp of salt, 1 tsp of sugar, 1/2 tsp of black pepper powder, 1/2 tsp of garlic powder, 1/4 tsp of cinnamon powder, and 2 cloves into a fine powder. Add 2 pinches of lemon salt for tanginess (optional).

Prepare the Mint Seasoning by grinding dried mint leaves into a fine powder. Add 1 tbsp of mint powder, 1 tbsp of chat masala, 1/2 tsp of black salt, and 1/2 tsp of black pepper powder. Mix well and set aside.

Transfer the rice flour mixture onto a silicone sheet or baking paper while still hot and knead it using the sheet.

Add 1/2 cup of grated cheese to the dough (optional) and mix well until the dough is smooth and firm after cooling slightly.

Take a ball-sized piece of dough, cover the remaining dough, and dust with rice flour.

Roll out the dough thinly and trim the sides to cut it into square shapes.

Dust with rice flour to prevent sticking.

Heat oil in a pan over medium heat and deep fry the rice squares until they float and puff up, frying uniformly on medium flame until golden brown and crisp.

Drain off the crispy rice crackers and season with 1 tbsp of prepared mint seasoning for mint-flavored crackers, 1 tbsp of prepared tomato seasoning for sweet and sour tomato-flavored crackers, and 1 tbsp of homemade cheese powder for cheese-flavored crackers.
