Start with tahini in a bowl.
Add water to the tahini to achieve desired consistency, starting with a small amount and gradually adding more until creamy.
Zest and juice a lemon, adding both to the tahini mixture.
Add a teaspoon of salt to the mixture.
For the second dressing, start with tahini again and add water until creamy.
Add a teaspoon of gochugaru, a teaspoon of sesame oil, a clove of minced garlic, and a chunk of fresh ginger to the tahini mixture.
Substitute cider vinegar for rice wine vinegar, and add fish sauce for saltiness if desired.
For the third dressing, start with water in a blender, followed by a splash of cider vinegar and the juice of a lemon.
Add half a bunch of cilantro, half a bunch of flat leaf parsley, and a bunch of green onions to the blender.
Blend until smooth.
