Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

In a large bowl, add 4 cups (385 grams) of rolled oats.

Add 2 cups (140 grams) of desiccated sweetened coconut.

Add 2 cups (200 grams) of sliced almonds, ensuring they are not toasted.

Add 0.5 teaspoon of salt and 1 teaspoon of cinnamon.

Add 80 grams (about 1/2 cup) of walnuts (optional).

Mix the dry ingredients with clean hands until well combined.

Microwave 3/4 cup (100 grams) of coconut oil until melted; if using liquid oil, skip this step.

In a bowl, combine the melted coconut oil with 1/2 cup (115 grams) of maple syrup and stir.

Pour the liquid mixture over the dry ingredients and stir until everything is nicely coated.

Spread the granola mixture onto two baking sheets.

Bake in the oven for 45 minutes to 1 hour, stirring every 15 minutes to ensure even toasting.

After about 45 minutes, check for even toasting and stir if necessary; if not browned, return to the oven for another 15 minutes.

Once evenly toasted, remove from the oven and let cool.

After cooling, add 1 cup (115 grams) of roasted cashew nuts and 100 grams of dried cranberries to the granola.
