1

Mix 1 cup of warm water with 1 teaspoon of sugar and 1 teaspoon of instant yeast in a bowl; stir vigorously and let sit for about 10 minutes until bubbles form on top.

2

In a large mixing bowl, add 2 cups of all-purpose flour and pour in the yeast mixture in three intervals while mixing the dough in one direction.

3

Knead the dough until it is smooth and cleanly pulls away from the bowl, about 8-10 minutes; cover and let rise in a warm place for about 1.5 hours until doubled in size.

4

Finely chop 6 cloves of garlic and 1 teaspoon of ginger; dice 1 cup and 1/4 of mushrooms.

5

In a bowl, mix 16 ounces of ground pork with the chopped garlic, ginger, mushrooms, 2 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of oyster sauce, 2 teaspoons of cornstarch, 2 teaspoons of sugar, 2 teaspoons of chicken bouillon powder, and 2 tablespoons of Chinese cooking wine; mix slowly with 1/2 cup of warm water in three pours, mixing in one direction.

6

Once the dough has risen, knead it again for a few minutes to remove air pockets; divide the dough into 6 pieces.

7

Roll each piece into a circle, leaving the center thicker than the edges to hold the filling; about the size of your palm.

8

Add about 1 tablespoon of filling to the center of each dough circle and pinch the edges to seal the bun.

9

Place the buns on parchment or wax paper in a steamer; cover and let rise for another 30 minutes.

10

Fill a pot with water and bring to a boil; place the steamer over the pot and steam the buns for 15-20 minutes until fluffy and cooked through.
