1

Pour oil into a big pot and set up a candy thermometer.

2

Weigh out 1 cup of flour (120 grams) and set aside.

3

Cut up 6 tablespoons of butter (85 grams) into tablespoon-sized pieces.

4

Add 1/4 cup of sugar (50 grams) and 1 cup of water to the pot with the butter and 1/2 teaspoon of salt.

5

Place the pot over medium heat and bring to a rolling boil while stirring with a wooden spoon.

6

Once boiling, turn off the heat and dump in the flour, stirring until it forms a ball.

7

Place the pot back over heat and stir for about 30 seconds until it pulls away from the pan.

8

Transfer the dough to a stand mixer with a paddle attachment.

9

Crack 3 eggs into a separate bowl, and add them one at a time to the mixer, mixing on medium speed.

10

Add 1 teaspoon of vanilla extract and mix until the dough is glossy and silky.

11

Fill a piping bag fitted with a large star tip with the churro dough.

12

Make cinnamon sugar by combining 3/4 cup of sugar and 2 teaspoons of cinnamon in a bowl.

13

Pipe churros into the hot oil, cutting them to about 3 to 4 inches in length.

14

Fry churros for about 90 seconds on each side until golden brown.

15

Remove churros and drain on paper towels, then roll in cinnamon sugar.

16

For the chocolate sauce, combine 2/3 cup of semi-sweet chocolate chips, 2/3 cup of cream, and 2 teaspoons of cinnamon in a bowl and microwave for about a minute, stirring until smooth.
