Beef Kofta

2 kg beef mince
250 g onion
6-7 green chilies
2 tbsp red chili powder
1 tbsp salt
1 tsp black pepper powder
1 tbsp kofta masala
1 tsp garlic powder
1 tsp ginger powder
2 eggs

1 cup yogurt
1 tbsp turmeric powder
1 tbsp ghee
1 tbsp garam masala
2 tbsp tamarind
2 tbsp dried plums
1 glass water

Start by taking 2 kg of beef mince that has been chopped three times in a machine.

Add 3 green chilies to the minced meat.

In a large bowl, add the minced meat and ensure to squeeze out any excess water before mixing.

Chop 250 g of onion and 6-7 green chilies, squeezing out their water as well.

Add 2 tbsp red chili powder, 1 tbsp salt, 1 tsp black pepper powder, 1 tbsp kofta masala, 1 tsp garlic powder, and 1 tsp ginger powder to the minced meat mixture.

Add a generous amount of chopped fresh coriander to the mixture.

Crack 2 eggs into the mixture and mix everything thoroughly with your hands, ensuring it is well combined.

Grease your hands with a little cooking oil to prevent sticking while shaping the koftas.

Shape the mixture into koftas, pressing out any air to prevent them from breaking during cooking.

Prepare the gravy by heating 1.5 cups of cooking oil in a pan.

Add fried onions to the oil and sauté until golden.

Add 1 tsp ginger-garlic paste and mix well.

Add 3-4 tbsp of water to prevent the onions from burning and to create a good paste.

Stir in 1 tbsp red chili powder, 1 tbsp ghee, 1 tsp salt, and 1 tbsp turmeric powder, mixing well.

Add 1 cup of yogurt to the spice mixture and stir until well combined, cooking on low heat.

Add the prepared koftas directly into the gravy without frying them first.

Pour in 1 glass of water, cover the pan, and let it cook on low flame for 15-20 minutes.

After cooking, check the koftas; they should not break if prepared correctly.

Garnish with fresh coriander and whole green chilies for presentation.
