Cantonese Pork Belly Char Siu

Lightly score the pork belly with a fork to tenderize it and enhance flavor.

In a bowl, combine red bean curd, juho paste, oyster sauce, soy sauce, dark soy sauce, roast cooking wine, sugar, five spice powder, white pepper, and minced garlic; whisk together.

Transfer the pork belly to a large Ziploc bag and pour in the marinade, squeezing out most of the air before sealing it.

Massage the marinade into the pork belly and place the bag in the fridge to marinate overnight, flipping halfway through.

Preheat the oven to 400°F (204°C) and position the baking rack in the middle.

Line a roasting pan with aluminum foil and place a roasting rack on top.

Remove the pork from the Ziploc bag and place it on the roasting rack; reserve the marinade for later use.

Roast the pork in the oven for 30 minutes.

After 30 minutes, remove the roasting pan and brush the reserved marinade all over the pork, flipping it to coat both sides.

Return the roasting pan to the oven and roast for another 30 minutes.

In a bowl, mix honey with warm water and whisk to combine.

Remove the roasting pan from the oven, brush the honey glaze over the pork, flip it, and glaze the other side.
