Ingredients

  • โ—1 tablespoon Chinese five-spice powder
  • โ—1 teaspoon salt
  • โ—1 teaspoon sugar
  • โ—1 star anise (optional)

Instructions

  1. 1In a saucepan, place the eggs and cover them with water. Bring to a boil over medium heat.
  2. 2Once boiling, reduce the heat and let the eggs simmer for 10 minutes.
  3. 3After 10 minutes, remove the eggs from the heat and place them in a bowl of ice water to cool.
  4. 4Once cooled, gently tap the eggs with a spoon to crack the shells all over, but do not peel them.
  5. 5In a separate pot, combine 4 cups of water, soy sauce, black tea leaves, five-spice powder, salt, sugar, and star anise (if using). Bring this mixture to a boil.
  6. 6Once boiling, add the cracked eggs to the pot and reduce the heat to low.
  7. 7Cover the pot and let the eggs simmer in the tea mixture for at least 1 hour (the longer, the better for flavor).
  8. 8After simmering, remove the eggs from the pot and let them cool slightly before peeling.
  9. 9Serve the tea eggs warm or cold, as a snack or part of a meal.

  6. 6Cover the dish with aluminum foil to prevent water from dripping into the eggs during steaming.
  7. 7Place the dish in the steamer and cover with the lid.
  8. 8Steam the eggs over medium heat for about 12-15 minutes, or until the eggs are set but still slightly jiggly in the center.
  9. 9Remove the dish from the steamer and let it cool for a few minutes.
  10. 10Garnish with chopped green onions before serving.
