Kuboos

Cultural Context

Kuboos, a traditional flatbread from the Arabian Peninsula, is a staple in Emirati cuisine. Often enjoyed with various dishes, it symbolizes hospitality and is commonly served during meals and gatherings. Today, Kuboos has gained popularity beyond the region, with variations found in many Middle Eastern countries.

1 cup lukewarm water
1 tbsp sugar
3/4 tsp active dry yeast
2 cups all purpose flour
1/2 cup wheat flour
salt
2 tbsp olive oil
1

In a bowl, add 1 cup lukewarm water, 1 tbsp sugar and 3/4 tsp active dry yeast. Give it a mix and rest for 10 mins.

2

In a bigger bowl, add 2 cups all purpose flour, 1/2 cup wheat flour, salt to taste, 2 tbsp olive oil and the activated yeast mixture. Give it a good mix and add water as required. Knead the dough for 8-9 mins. Sprinkle some flour if it's sticky!

3

Grease a bowl with olive oil and place the dough in it. Cover and rest for 2 hours. It will double in size after 2 hours. Flatten and fold the dough in; repeat a few times and divide the dough into small balls. Cover the pita balls with a damp cloth so that it doesn't get dry!

4

Sprinkle flour and roll each pita bread. Cover the flattened pita breads with a damp cloth and rest for 20 mins to get soft pita breads!

5

Make sure the tawa is hot enough. Place the pita bread and flip twice when you see small bubbles. Once it puffs up, it's ready to serve!
