The combination of honey and pistachios creates a delightful balance of sweetness and nuttiness, making it a beloved dessert in Turkish cuisine. Today, variations of halva can be found around the world, showcasing local ingredients and flavors.

Add 1.5 cups of tahini to a bowl.
Mix in 0.25 teaspoon of kosher salt, 0.5 teaspoon of vanilla extract, and 1.5 teaspoons of honey.
Add crushed pistachios to the bowl and mix with a wooden spoon; set aside.
In a saucepan, combine 1.25 cups of sugar and 0.25 cup of water; heat on medium to low until boiling.
Let the sugar mixture boil until it reaches 250 degrees Fahrenheit, stirring infrequently to prevent crystallization.
Pour the hot sugar syrup into a glass measuring cup for easier pouring.
Slowly pour the syrup into the tahini mixture while mixing with a wooden spoon until it forms a ball and pulls away from the sides of the bowl; do not over mix.
Line a loaf pan with parchment paper in a cross shape for easy removal.
Press the halva mixture into the lined loaf pan, topping with more pistachios and a drizzle of honey, pressing the pistachios into the mixture.
Let the halva sit at room temperature until cooled, then wrap tightly in Saran Wrap and place back in the loaf pan.
Refrigerate for a couple of hours to let it set.
