Prepare chicken stock with salt and separate boiled chicken and stock.

Boil macaroni and cook for 8-10 minutes.

Melt the butter over medium heat in a saucepan.

Sprinkle over the flour and mix with a wooden spoon to create a roux.

Cook out the roux for about 2 minutes, stirring.

Add sautéed flour, milk, chicken stock, mozzarella, and cheddar cheese and blend so there are no lumps, reserving some cheese for sprinkling over the top to bake.
