Cut 370 g of Semmelwürfel into small cubes or use stale bread and cut it into cubes.

For the recipe, if using stale bread, only 200 ml of milk is needed instead of 300 ml.

Cut 150 g of Speck into small pieces.

As a secret tip, add 150 g of Braunschweigerwurst for better flavor.

Finely chop 1 onion.

Heat a pan and add some oil and 90 g of butter until melted.

Add the chopped onion to the pan and sauté until translucent, not browned.

Add the chopped Speck to the pan and sauté until slightly crispy.

Add the Braunschweigerwurst and chopped parsley (including stems) to the pan and sauté briefly.

Optionally, press in 2 cloves of garlic and sauté for a moment.

In a bowl, combine the sautéed mixture with the Semmelwürfel.

Add 300 ml of warm milk to the mixture and stir well.

Season with salt and pepper, and add nutmeg to taste.

Let the mixture rest for 10 minutes.

After resting, add 4 beaten eggs to the mixture and mix well.

While the mixture rests, prepare a Krautsalat by shredding half a head of cabbage and mixing it with 1 tablespoon of sugar, 1 tablespoon of salt, and ½ tablespoon of caraway seeds.

Let the Krautsalat sit until ready to serve, then add 3 tablespoons of vinegar and 3 tablespoons of sunflower oil before serving.

After the mixture has rested, if boiling the dumplings, add 2 tablespoons of flour to help them hold together.

Form the mixture into round dumplings, about the size of a cup (120 ml per dumpling).

Prepare a steaming setup with water in a larger pot and place a steaming rack inside.

Place the dumplings on the steaming rack and cover with a lid.

Steam the dumplings for 20 minutes, or if boiling, cook for 12 minutes in simmering broth.
