Pour 250 milliliters of lukewarm milk into a bowl.

Add 1 tablespoon of sugar and 1 pack of dried yeast, leave in a warm place for a few minutes.

In a mixing bowl, add 0.5 kilograms of white bread flour and 100 grams of unrefined sugar.

Grate the zest from 1 organic unwaxed lemon and add it to the bowl.

Grate a little piece of nutmeg, adding only a pinch to the bowl.

Add 100 grams of almond flakes and 100 grams of raisins to the mixture.

To make egg wash, whisk 1 whole egg with a dash of milk and brush the buns with it.
