1 teaspoon bicarbonate soda
2 cups water
3 tablespoons light soy sauce
2 tablespoons shaoxing cooking wine
2 tablespoons cornstarch
3 tablespoons oyster sauce
2 tablespoons hoisin sauce
1 tablespoon fish sauce
2 tablespoons ketchup
1 teaspoon black pepper
1/2 cup cashews
3 tablespoons vegetable oil
3 tablespoons peanut oil
1 teaspoon MSG
2 tablespoons sugar

Prepare all ingredients by slicing carrots and capsicum into bite-sized pieces, slice chili, grate ginger, and crush garlic.

For the meat, slice chicken, pork, and beef thinly on the angle, removing any silver skin from the pork and slicing beef against the grain.

Marinate the meat by mixing 1 tsp of bicarbonate soda with 50 mls of water for every 500 g of meat, refrigerate for 1 hour, then rinse and dry.

Prepare a simple marinade with 1 tbsp of light soy sauce, 0.5 tbsp of shaoxing cooking wine, and 0.5 tbsp of cornstarch for 1 kg of meat, refrigerate for 35-40 minutes.

Make the sauce by combining ketchup, soy sauce, oyster sauce, and black pepper for beef; oyster sauce and cashews for chicken; and hoisin and fish sauce for pork.

Blanch broccoli in boiling salted water for 2-3 minutes, then cool.

Heat oil in a wok, cook the meat in batches for 1-2 minutes until browned, then remove.

Add more oil to the wok, sauté aromatics for 30 seconds, add hard vegetables first, then soft vegetables, cooking until 60% done.

Add the cooked meat back to the wok with the vegetables, pour the sauce around the outside of the wok, optionally add MSG and sugar, and thicken with cornstarch mixed with water if needed.
