In a large bowl, mix together plain flour and icing sugar.
Add cubed cold butter and rub it into the flour until it resembles breadcrumbs.
Add the egg yolk and stir with a round-ended knife.
Add a little cold water to bring the dough together, using hands to squeeze it into a soft dough without kneading.
Wrap the dough in clean film and chill in the fridge for about 30 minutes.
Roll out the chilled pastry dough between two pieces of baking parchment, checking with the tin for size.
Peel away the top layer of parchment, tuck the pastry into the tin, and prick the base with a fork.
Chill the pastry in the fridge while preparing the frangipane filling.
Beat together soft butter and golden castor sugar until light and fluffy.
Add the first egg and beat it in, followed by the second egg, mixing until smooth.
Stir in ground almonds, baking powder, and almond extract until combined.
Spread a layer of plum jam in the bottom of the pastry case.
Top with dollops of the frangipane mixture and spread to cover the jam.
Preheat the oven to 170°C and place a baking tray inside to heat up.
Bake the tart for about 40 to 50 minutes until cooked.
Let the tart cool completely before icing.
Make a water icing with water and icing sugar, spreading it over the tart.
Color some icing with pink food coloring and feather it on top using a cocktail stick or metal skewer.
Place half a cherry in the center and let the icing set for 5 to 10 minutes before serving.
