Chicken breast is leaner and often less expensive.
Mix together chili powder, paprika, onion powder, garlic powder, kosher salt, and black pepper in a bowl.
Season both sides of the pork chops with the spice mixture.
Heat olive oil in a large skillet over medium-high heat.
Add the seasoned pork chops to the skillet and cook for about 2 to 3 minutes per side until golden brown.
Remove the pork chops from the skillet and set them aside.
Lower the heat and add unsalted chicken stock and apple juice to the skillet.
Scrape the bottom of the pan to incorporate the flavors and let it simmer for a couple of minutes.
Add a little bit of butter and cornstarch dissolved in water to thicken the sauce.
Bring the sauce to a simmer and season with salt to taste.
Place the pork chops back in the pan and cover it.
Set the heat to medium-low and cook for about 4 to 5 minutes until the internal temperature reaches 145°F.
Baste the pork chops with the sauce before serving and garnish with chopped cilantro or parsley.
