In a bowl, combine 1.5 cups of white sugar and 0.5 cups of canola oil and beat until well combined.

Add 2 room temperature eggs one at a time and 1 teaspoon of vanilla extract, blending well.

Alternately add 1.33 cups of self-rising flour and 1 teaspoon of baking soda with 0.33 cups of evaporated milk, mixing until blended.

Stir in 1 cup of mashed sweet potatoes until well incorporated.

Pour the batter into a greased 9x5 inch loaf pan.

Bake in a preheated 350°F oven for one hour.

Brush honey butter on the bread after baking.
